Why from*email is showing in my text campaigns inboxes as my SMTP email even though i changed that at delivery server and when setting up campaign ?

You can set from your delivery server settings: Force FROM > Never and there will be used the from address from your campaign.
 
I have did that over times just to be sure but it still

I have did that over time but i still get the SMTP email as the send from email even tho i set it to Never. What could possibly be the issue. ?

This means that the SMTP server rewrites the header, so check that on the smtp server side.
