you need to setup main domain in your server first.

Set tracking.example.com A record to this IP is not working...

delete cname for tracking
assign subdomain (will usually auto-create alias/A record, but check)
(so you do not need to set a cname definition in DNS yourself)
and if you use a new IP for the tracking only, then it might work
