It looks like only 1-3 mails are sent per 1minute, but there are still 100+ pending

1.Why is it so slow? there are like 100~300 mails still pending cause of this speed. Is it due to some limitation? can it be cause I didn't update to the new Mailwizz' version?
2. How important it is to update every version once it's up?

Please check this article: https://www.mailwizz.com/kb/performance-improvements/ here is explained all about sending performance.
Also you can check if on your delivery server you have some pause like: Pause after send.

It's important to keep the app up to date as we fix bugs or add new features with each release.
