Where is DOI email?

I know where the template is in the backend, But when I turn on a list and make it DOI, it is not clear where it selects the template to send and how I can edit it (not globally but specific to that list).

when I test, I’m not even receiving the default template

Thanks, got that now.
However follow up question-- Is there a way we can specify the precise MTA that is being used to send these confirmation emails vs. the system randomly selecting, and if so, where?

When you create a delivery server, you can set it's "use for", in your case, you will want list emails
